Which one
The two most capable clip models here, and they are not competing for the same shot.
Veo 3.1's distinguishing feature is audio. It generates dialogue, room tone and score from the same prompt that produces the picture, and a line quoted verbatim comes back spoken. Nothing else in the catalog does that. If a character says something, this is the model, and the decision ends there.
Seedance 2.5's distinguishing features are capacity and length. Thirty reference images, ten reference videos and ten reference audios, against Veo's three references, and takes up to thirty seconds against Veo's eight. For a scene with four characters who all have to stay themselves, or a shot that has to run longer than eight seconds without a cut, Veo cannot do the job at any price.
Shape favours Seedance too: six aspect ratios including 21:9 and 4:3, against Veo's two. A square or 4:5 deliverable rules Veo out entirely.
On price they are closer than they look. A five-second 720p Seedance take is 96.5 credits; a five-second Veo take is 83.5 silent and 167 with audio. But Seedance jumps to 403.5 if you pass a reference video rather than images, because video-in meters at roughly four times video-out, which is the single most expensive mistake available on either model.
Both are one pick in the same composer.
Switching models does not move your references or your library. New accounts start with credits to try both.
